A Letter from the Field
Dear Aetos,I hope this finds you well. I own a five-storey restaurant in Cebu, and I need guidance before purchasing an insurance policy to give us true peace of mind.We are famous for selling over 300 crackling lechons a day. To keep up with ongoing demand, I recently expanded our kitchen setup to five heavy-duty combi deck ovens. Everything was running smoothly until one morning, when a housemaid shouted that there was a fire near the oven storage area. What started as a routine prep day turned into a nightmare of blaring firefighter sirens, ambulances, billowing smoke, and the thick, greasy smell of burning fat. When the flames were finally contained, we investigated the cause: a staff member had forgotten to place the undertray beneath one of our newly purchased deck ovens, allowing hot fat to drip directly onto an open flame. The resulting fire destroyed three months of catering inventory, damaged major equipment, and severely burned the building structure. Please advise us on the best insurance package to protect us going forward.Sincerely,Cebu Lechon Enterprises

5 Critical Questions to Ask Before Buying a Policy
- Am I insured for full replacement value? Are your building and equipment insured for their current replacement cost, or will you face penalties for underinsurance?
- Do I have Business Interruption coverage? Will the policy replace lost net income and cover ongoing payroll while your doors are closed for repairs?
- Is my Fire Safety Inspection Certificate (FSIC) up to date? Missing or invalid permits can delay claims or lead to reduced payouts.
- Does the policy cover grease and kitchen-specific fires? Ensure there are no exclusions regarding fat dripping, exhaust duct fires, or improper equipment operation.
- If I am renting, whose insurance covers what? Verify whether the landlord’s policy protects your custom fit-out, kitchen equipment, and stored stock, or if you need separate tenant coverage.
